Start by preheating your oven to 350 degrees. Line a muffin tin with cupcake wrappers.
Next, in a medium bowl, cream the sugar and butter together.
Beat in your eggs one at a time, then stir in the vanilla.
Do NOT beat in the vanilla.
Combine the flour and baking powder and add it to the batter. Make sure all the lumps are out.
Lastly, mix in the milk until the batter is smooth. Adding the milk in last creates a spongey, moist cake.
Pour the batter into your cupcake wrappers.
Bake for 25 minutes.
Buttercream Frosting Ingredients:
First, grab a small mixing bowl. Dissolve the salt into the water.
In a larger mixing bowl, or a stand mixer, mix the butter and shortening until good and combined.
Add in the meringue powder and vanilla. Slowly add in the sugar, one cup at a time.
Add in the salted water and mix for 2 minutes. No stopping.
Wait for your cupcakes to cool and then ice them how you see fit.
I used a star tip only because it’s the quickest.
