Simple Vanilla Cupcakes and Buttercream Frosting {Foodie Friday}

Cupcake Ingredients:

1 cup sugar
1/2 cup butter
2 eggs
2 tsp vanilla extract
1 1/2 cups all purpose flour
1 3/4 teaspoons baking powder
1/2 cup milk

Start by preheating your oven to 350 degrees. Line a muffin tin with cupcake wrappers.

Next, in a medium bowl, cream the sugar and butter together.

Beat in your eggs one at a time, then stir in the vanilla.

Do NOT beat in the vanilla.

Combine the flour and baking powder and add it to the batter. Make sure all the lumps are out.

​Lastly, mix in the milk until the batter is smooth. Adding the milk in last creates a spongey, moist cake.

​Pour the batter into your cupcake wrappers.

​Bake for 25 minutes.

​Buttercream Frosting Ingredients:

1/2 cup shortening (I use Crisco)
1/2 cup salted butter
2 TBS meringue powder (This can be found at Hobby Lobby, Michael’s, & Walmart if you’re lucky.)
1 tsp vanilla extract
4 cups powdered sugar
2-3 tbs water depending on what consistency you want the frosting to be (I used 3.)
1/4 tsp salt

First, grab a small mixing bowl. Dissolve the salt into the water.

In a larger mixing bowl, or a stand mixer, mix the butter and shortening until good and combined.

​​Add in the meringue powder and vanilla. Slowly add in the sugar, one cup at a time.

Add in the salted water and mix for 2 minutes. No stopping.

Wait for your cupcakes to cool and then ice them how you see fit.


I used a star tip only because it’s the quickest.
