Oatmeal Cookies {Foodie Friday}

Hi Ladies!

I feel that I’m back to the land of the living! My sweet baby boy is a month old and we are loving life. If you ever want to be challenged, try baking with a newborn. Late the other night, I was itching to stir in a bowl but knew my time was limited, so I decided to make oatmeal cookies (plus they help with milk production….win/win). They are so good and easy that I wanted to share! They recipe is an old one that I altered.

Oatmeal Cookies

Oatmeal Cookies

2/3 cup sugar

2/3 cup brown sugar

1 stick of butter

1 tsp cinnamon

1 tsp vanilla

2 eggs

4 packets of instant oatmeal *

1 cup of self-rising flour

  1. Heat oven to 375 degrees
  2. Beat all of the ingredients except the oatmeal and flour with mixer until well blended.
  3. Stir in the packets of oatmeal and flour.
  4. Place spoonfuls on a cookie sheet about 2” apart.
  5. Bake for 10 minutes.

* I used maple and brown sugar oatmeal in my cookies.

This is the perfect cookie recipe to put additions into the recipe. Raisins, pecans, M & M’s…..you name it and I’m sure it would be good!
