Sausage and Cheese Muffins {Foodie Friday}

If you have a sausage ball obsessed (like my husband), but you dread the mundane task of balling up a hundred sausage balls……..trust me, this recipe is for YOU!!

With the Super Bowl coming up and College Bowl games still on tv…..here’s an easy recipe you can whip up for a party or simply make for breakfast!

Instead of wasting what seems to be hours on rolling sausage balls, simply make them into mini muffins! They are identical to the balls but with a slightly different shape.

Sausage and Cheese Muffins
1 lb. mild sausage
1 teaspoon onion powder
3 c Bisquick
2 c shredded cheddar cheese
3/4 c milk
1 teaspoon cayenne red pepper

Directions
Brown sausage and onion powder until done and drain.
In a bowl mix Bisquick, cheese, milk and cayenne pepper.
Mix Bisquick mixture with sausage and make sure the mixture is moist.
If not, add a little water as needed.

Here’s the best part. Instead of rolling into balls, place them in a mini muffin pan, full to the top. Amen.

Cook at 375 degrees for 15-18 minutes or until the top is a little browned. (My mixture filled an entire mini muffin pan but there was a good bit leftover so I rolled the rest into “real” sausage balls. My husband was happy about that. )
