Crock Pot Taco Soup

Crockpot Taco Soup

Raise your hand if you LOVE taco soup?  Oh, that’s everyone…wonderful!  This is my absolute favorite recipe.  If I could get by with cooking it everyday, I would do so. However, my fiancé may change his mind about marriage if I prepare the same meal….so…I digress.

Let’s get to the goodness!

You only need a few simple ingredients.


1 lb ground beef
1 large chopped onion (optional)
1 pkg. taco seasoning mix
1pkg. Hidden Valley ranch dressing mix
1 (15oz) can pinto beans
1 (15oz) can whole kernel corn
1 (15oz) can pinto beans
1(15oz) can black beans (optional but I love em!)
1 (15oz) can stewed tomatoes (I omit this step and use 1 can of rotel)


Brown the ground beef (and onion if using) in a skillet and drain the grease. Transfer to crockpot, add seasoning and all other ingredients. Let simmer for approximately 1 hour. I usually put mine on during lunch and let it simmer in the crockpot for about 3-4 hours. Finally, add tortilla chips and sour cream and there you have it, comfort food for a cold November night.
