Chocolate Chip Banana Bread {Foodie Friday}

Back to school time is my favorite time.

New markers and crayons and glue sticks—oh my!

No, but seriously, I do love this time of year.

My favorite part?

The opportunity for a fresh start. My daughter will be in the third grade this year, and I love that back-to-school time means a chance for Libby to do and be whomever she so chooses.


And this year, I hope to kick the year off right by making her favorite after-school-snack to start the year off right with some fruit and a cup of chocolate chips.

But, get ready ladies…this isn’t your grandmother’s banana bread recipe.


This is what I like to call ‘I want something special and yummy and homemade, but I don’t have time to be in the kitchen all. day. long’. It also happens to be nothing short of delicious.

All you need is four things:

Yep, you read it right….only 4 ingredients

-two to three mashed up bananas (the browner the better)
-one box of yellow cake mix
-two eggs
-one cup of chocolate chips

Simply mix the bananas, dry cake mix, and eggs until they are well blended. Stir in the chocolate chips and bake in a well-greased bread pan at 350 for forty-five minutes. It’s all the goodness of cake with the added bonus of bananas.

And it’s served best warm on the first day of school with a side of fresh start.
