Cheesiest Mac and Cheese {Foodie Friday}

Cooking with kids can be messy, frustrating, and slow…but it can also be lots of fun! I recently married my honey, David, and became and instant Mommy to a sweet and energetic 4-year old little girl. Even before I was “Mama” one of the things we loved to do together was cook. K’s (K is my sweet energetic girl) prefers baking, though I’m convinced it’s because she wants to lick the beater…and who can blame her; I want to just eat the batter without cooking it!

Anyway, she started pre-K this year and has really become interested in learning and spelling. Last week, my sweet sister-in-law and brother send K a belated birthday gift that included “My A to Z Recipe Box.” It is super cute. Has a recipe for every letter and even specifies the steps in the recipes where “parents should do this step.”

I came up with the bright idea that we could cook by the letter each week.

David and K love macaroni and cheese. I’m not the biggest fan. And what do you think was the food for “C” (her letter last week)?

Of course, K wanted to make it.

I think cooking with kids is a great way to teach them about counting. I always have her count how many cups we put in. She’s not old enough to understand half yet…but I still talk to her about it. And in addition to being educational it’s just a good way to spend time with you child! So, if you have a little one…bring them into the kitchen. Take advantage of their desire to be with you…then enjoy the spoils after!

Cheesiest Cheese and Macaroni


1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
½ cup cottage cheese (my sub for ricotta)
¼ cup grated Parmesan (use fresh!)
3 cups milk (Really I used slightly less than this because it called for half milk, half cream…yikes…and I didn’t think skim milk would be a direct 1:1)
8 cups water (for cooking noodles)
2 cups dry macaroni

Preheat oven to 350….and wash your hands and put on your aprons (what a cute instruction!)

In a large bowl, combine all the cheeses and stir until they’re mixed well.

Add the milk to the cheese and mix well.

In a large pot, boil the water. Then add macaroni and cook for 8-10 minutes (until done). Drain the macaroni in a colander. *

Add macaroni to cheese sauce (it’s not REALLY a sauce at this point) and stir well to coat.

Pour the mixture into a large baking dish. (option to sprinkle with bread crumbs and dot with butter…we didn’t)

Bake for 25-30 minutes or until the pasta is bubbly.*
